To prepare this extraordinary polenta, we recommend pouring the flour in rain into 1.5 litres of cold, already salted water. Bring the mixture to a boil, turning with a whisk for about 5/6 minutes, always in the same direction. This will allow the polenta to reach its desired, creamy and enveloping consistency.
